Ingredients
2 eggs
1 ripe medium banana
1/4 tsp vanilla
1/8 tsp cinnamon
Optional Toppings:
1 Tbsp almond butter mixed with 3 Tbsp Greek plain yogurt and a drizzle of honey or Pure Organic Maple Syrup
Directions
1. Mash banana with a fork. Beat two eggs and combine with mashed banana. Add in vanilla and cinnamon. Or you can use a blender or food processor to combine all ingredients and once, blending until smooth.
2. Heat griddle over low heat, spray with a non-stick spray (we use coconut oil or olive oil spray) or coat with a little olive oil, then pour batter onto griddle in small circles (make sure the pancakes are smaller than the size of your palm so they are easier to flip). Flip after edges start to cook and allow the pancakes to cook through.
