Naked Chicken, Shrimp & Steak Fajitas

If you love Mexican food, these Naked Fajitas are AMAZING but without the extra calories!  You can edit the ingredients if you don't want to use all three (chicken, shrimp or beef) and just use 1 or 2 instead. This recipe is super quick & easy, too!

Ingredients:
1 lb of organic chicken

1 lb of uncooked, peeled shrimp

2 tablespoons olive oil
1 tablespoon lime juice
1 garlic clove, finely minced
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 large red onion
2 red pepper

1 green pepper

Toppings (optional):

Hot Sauce
Salsa
Greek yogurt - plain, fat-free, (instead of sour cream)

Diced tomatoes
Shredded cheese

Directions:
1. Slice chicken and/or steak into thin strips.
2. In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, black pepper & sea salt.
3. Add chicken, shrimp & beef, and stir to coat, then set aside
.
4. Cut onions in half lengthwise and slice into strips, cut your peppers into strips.
5. In large non-stick skillet over medium high heat, heat remaining tablespoons of olive oil.
6. Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
7. Add chicken, shrimp & steak to skillet, cook, stirring for 3-4 minutes or until they lose their red color.
8. Return onions and peppers to skillet; stir for about one minute.

Serve over brown rice, add your desired toppings & enjoy!
