Ingredients:
- 1 lb of lean, all-natural ground turkey
- Approximately 6 yellow banana peppers
- 1 jar of marinara sauce
- 1 cup of shredded mozzarella cheese
- 1/2 cup of breadcrumbs
- 1 Tbsp of parsley
- Sea salt & Pepper
Directions:
- Preheat the oven to 350 degrees
- Cut off the tops of the banana peppers and make a slit down the middle of one side
- Rinse & remove seeds
- Boil the peppers for about 5 minute to soften them, remove and set aside
- In a mixing bowl, add turkey, breadcrumbs, parsley, and salt & pepper (a large pinch of each) and mix well with a spoon
- Stuff mixture into the peppers
- Spread approximately 1 cup of marinara sauce on the bottom of a baking dish
- Place the peppers (slit side face up) on the baking dish
- Pour the remaining sauce over the banana peppers
- Sprinkle the mozzarella over the peppers
- Bake for approximately 45 minutes
