STUFFED BANANA PEPPERS

One of my fav healthy + super yummy #lowcarb meals to make! 🌶  These are super easy, can be prepped in under 10 min, thrown in the oven + voila 👌🏻 I've added some tips below as well as another option if you have kids or people in your family (like mine) who do not share the same love of spice as you do. I did make my own homemade organic tomato basil sauce for this but your fav jar of sauce will do! 


Ingredients:
  • 1 lb organic ground turkey
  • Approx 6 yellow banana peppers (or can you Cubanelle peppers if you prefer less spicy)
  • 1 jar of marinara sauce (or approx 2-3 cups)
  • 1 cup of shredded mozzarella cheese (*look for "rBST free" on the label)
  • 1/2 cup of organic breadcrumbs
  • 1-2 tablespoons of dried parsley (or 2-3 tablespoons fresh)
  • Sea salt & pepper (Pink Himalayan sea salt is my fav!)


Directions:

  1. Preheat the oven to 350 degrees
  2. Cut off the tops of the peppers and make a slit down the middle of one side
  3. Rinse & remove seeds (*be careful NOT to touch your face or eyes, wear gloves if possible)
  4. In a large bowl, add turkey, breadcrumbs, parsley, salt & pepper and mix well with a spoon 
  5. Stuff mixture into the peppers and place them (slit side face up) on a baking dish
  6. Bake for approx 40 minutes 
  7. While the peppers are baking, warm the marinara sauce on the stovetop
  8. Sprinkle the mozzarella over the peppers and bake for an additional 5 minutes, or until cheese is melted, then remove from oven
  9. Plate the peppers, use a ladle to pour marinara sauce on top, then garnish with parsley + enjoy!

FISH TACOS

BLACKENED FISH TACOS RECIPE Joanna Gaines


RED CABBAGE & MANGO SLAW
 4 cups finely shredded red cabbage (about 1/2 medium head)
1-1/2 cups diced mangoes
1 cup shredded, peeled carrots
Juice of 2 limes
1 T extra virgin olive oil or avocado oil (my favorite!)
1 tsp sea salt

FISH TACOS
1-1/2 lbs skinless mahi-mahi (my fav!), halibut, turbot, or striped bass fillets
Juice of 1 lime
1 tsp hot sauce
1 tsp paprika
1 tsp garlic salt
1 tsp black pepper 
Vegetable oil spray
12 corn tortillas (my fav are LaTortilla Factory non-gmo corn tortillas)
12 large cilantro sprigs OR dried cilantro
12 lime wedges 

OPTIONAL GARNISHING SAUCE
Spicy Chipotle Sauce (this one's my fav!!! And it's all natural & gluten-free)


DIRECTIONS
1. To make the red cabbage and mango slaw: In a large bowl, combine the cabbage, mangoes, carrots, lime juice, oil and salt, and toss unit well combined.

2. To make the fish tacos: Place the fish in a large shallow dish.  In a small bowl, combine the lime juice, hot sauce, paprika, garlic salt, and pepper. Coat both sides of each fillet with the sauce. Cover and refrigerate for 20-30 minutes.

3. Our favorite way to cook the fish is to grill it. However if you're unable to grill, spray a seasoned cast iron skillet with oil and heat on high unit hot.  Turn on the ventilation fan.  Cook the fish until opaque throughout, 3-5 minutes per side. Cook in batches if necessary. Transfer to a platter, cut into pieces for servings and set aside.

4. In a separate small pan, turn to medium high heat unit hot. Heat the tortillas on the pan for 1 minute each side, until they are hot and malleable.

5. To build the tacos, divide the fish evenly on the tortillas. Top each with cabbage & mango slaw and then cilantro. Optional: Drizzle with the Spicy Chipotle sauceServe with lime wedges & enjoy!


Note: If there is leftovers, store the fish and slaw in separate covered containers in the refrigerator for up to 3 days; if storing prepared tacos, store up to 2 days.


Makes approx 6-8 tacos

13 years ago today, I met my future husband ❤️

My friends dragged me out of the house & I literally told them I didn't want to meet ANY guys that night & I DEFINITELY didn't want to even THINK about dating for a reallllly long time. 15 minutes into our girls night, I met this guy & we've been inseparable ever since 💑

Babe, you've changed my life in so many ways....

I never thought I wanted a pet, but 6 months after we met, you moved into my townhouse and said "we need to get a dog." Before I knew it, we had our first fur baby boxer, Gia, who I feel COMPLETELY in love & obsessed with. That little wiggle butt brought so much LOVE & JOY into our lives for the next 11.5 years and I can't thank you enough for that 🐾

I also wasn't sure I ever wanted to get married. But I guess when you meet the right person, anything can change. 1.5 years after we met, you surprised me & popped the question in the MOST BEAUTIFUL place I could have ever dreamed of {right before we took this pic}, and I couldn't have been happier & more excited to be your wife 💍

And lastly, I never thought I wanted kids. Maybe because I was so career-driven or maybe because I was worried that I wouldn't be a good mom, but since the day we met, you opened my eyes. Then shortly after our 1 year wedding anniversary, we found out that we were going to be parents. My first reaction... sheer panic & tears. LOL Yours... pure excitement & joy. Becoming a mom has been the biggest BLESSING of my entire life. Our beautiful daughter is the absolute GREATEST GIFT you could ever have given me. Our little family means everything to me. I'm so grateful every single day for the life we've created together & look forward to creating many more memories with you ❤️

Flights are officially booked!! 🙌🏼 In exactly 2 months from today we'll be leaving the cold & snow and taking McKenna on her first CRUISE & also her first ever Beachbody trip to the Caribbean! 🛳🌊🌴 We were all set to bring her on the 2016 cruise I'd earned but we had to cancel just weeks before due to my emergency surgery. So when they told us the 2019 Success Club trip was going to be a cruise, I promised her we'd bring her & she is SO EXCITED!!! I feel so blessed to earn these rewards trips every year but even more blessed that I get to bring my family ❤️ She knows momma works hard to earn these trips & now she gets to experience how much fun they are:) I think she's most excited though to workout with Autumn & Shaun T on the boat! 😂 We can't wait!!!

This Classic Homemade Beef Stew recipe with sweet potatoes is the ultimate comfort dish on a cold day. It's so good, easy to make, filling, and only 117 calories per serving.  


INGREDIENTS

1/3 cup all-purpose flour (gluten-free if needed)

1 teaspoon sea salt

1/2 teaspoon black pepper

2 - 1/2 teaspoons Italian seasoning (divided) OR you can use1 teaspoon dried rosemary 1/2 teaspoon dried parsley, 1/2 teaspoon dried thyme

1.5 - 2 pounds organic beef stew meat, cut into 1 inch chunks

2 tablespoons Extra Virgin Olive Oil (divided)

1 medium onion, diced into large chunks

4 cloves garlic, minced

1-2 tablespoons balsamic vinegar or red wine

6 tablespoons tomato paste

1 medium Russet potatoes, leave skin on and chop into 1 inch chunks

2 medium sweet potatoes, leave skin on and chop into 1 inch chunks

2 medium organic carrots, peeled and chopped

2 stalks organic celery, chopped

2 teaspoons Worcestershire sauce

1 bay leaf

4 cups organic, low-sodium beef broth

Water (only enough needed to cover the vegetables)

2 tablespoons chopped fresh parsley (or 1 tablespoon of dried parsley), for garnish

sea salt and pepper to taste



DIRECTIONS
  1. In a large bowl, combine flour, salt, pepper, and 1/2 tsp Italian seasoning. Add meat and toss with a spoon until well coated.
  2. In a large pot on medium-high heat, add oil and sear the meat on all sides for about 3 minutes. Remove and set aside.
  3. Add another tablespoon of oil, then add the onions & garlic to the pan. Cook and saute for about 2 minutes, until onions start to soften. Add wine or balsamic vinegar to deglaze the pan. Stir in the tomato paste and cook for about 2 minutes. Add the beef back to the pan then toss in the potatoes, carrots, celery, 2 tsp Italian seasoning, Worcestershire sauce, bay leaf and stir in the beef broth. If there is not enough liquid to cover the vegetables, add just enough water as needed.
  4. Bring to a boil then turn heat down to low, cover and simmer for 1 hour to 1.5 hours (depending on your stove), stirring occasionally, until the meat and vegetables is tender to your liking.
  5. Remove from heat, serve and garnish with parsley.

It's not every day I get dressed up to work at home (actually 99.9% of days I'm in yoga pants, a messy bun & a t-shirt) but today I was asked to speak to a top team in our company on what it takes to be successful in this business.

I wish I had all these secret tips to give them... but the truth is, I just wanted it bad enough & was willing to work incredibly hard every day for it - because I wanted to change my life & my family's lives. I woke up one day & realized I was unhappy, unfulfilled, out of shape and tired of living paycheck to paycheck. I just wanted to be happy, be healthy, to do something that made a positive impact in this world, to have more freedom in my life, and most of all - be HOME with my baby.

So I said to myself - you have 2 choices... 1) You can CHANGE your life OR 2) Do nothing - and in one year from now, you'll be in the EXACT same place as you are today. And that second answer scared me more than anything. So when I found this business, I made a decision to go ALL IN. Not "try", but DO whatever it took to figure it out, MAKE it work and never give up.

My husband was 10000% skeptical (at the time lol), I hadn't worked out in 2 years, I barely had 100 friends on FB, I was SUPER shy (still am), super private, worked 60 hrs a week, had a busy 2 yr old at home, AND to top it off, we didn't even HAVE the 160 dollars it cost to even START this business.... but I did it anyways.

Moral of the story: If you have a goal or a dream, don't let anyone or anything stop you from pursuing it. And if there's one piece of advice I can give you - BELIEVE IN YOURSELF  Your dreams are not stupid and they are not crazy. If you see a better life for yourself, YOU CAN HAVE IT. Don't let YOU be the only one stopping you from achieving it. I always tell people - if I can do this, ANYONE can. Can I exercise and use 2B Mindset?
Yes. Exercise is not required for the program but is considered “extra credit.” I will personally be doing the Master's Hammer & Chisel lifting/cardio program by Autumn Calabrese & Sagi Kalev with my current accountability group.
Can I use Shakeology with this program?
Yes. Ilana recommends using Shakeology with 2B Mindset. I will be incorporating the Vegan Chocolate Shakeology, which I haven't gone a day without since 2013!  BEACHBAR Snack Bars and Shakeology Boosts are also recommended with this program.
Can pregnant or nursing mothers do the 2B Mindset program?
2B Mindset is a weight loss program. Since pregnant mothers should be gaining weight and not losing weight, it is not advised that they follow 2B Mindset during pregnancy.  For breastfeeding mothers, La Leche League International advises to wait at least two months before making any drastic effort to lose weight in order to allow your body to recover and ensure a steady milk supply. Keep in mind that breastfeeding women may naturally lose one to four pounds per month simply due to the amount of energy required to nurse in the first place.
Does the 2B Mindset nutrition plan use Portion Fix containers?
No. There are no containers used in this program.
Do I have give up sweets and alcohol during this program?
No.  Ilana will teach you how you can still have dessert and wine and still lose weight.
