This Classic Homemade Beef Stew recipe with sweet potatoes is the ultimate comfort dish on a cold day. It's so good, easy to make, filling, and only 117 calories per serving.
INGREDIENTS
1/3 cup all-purpose flour (gluten-free if needed)
1 teaspoon sea salt
1/2 teaspoon black pepper
2 - 1/2 teaspoons Italian seasoning (divided) OR you can use1 teaspoon dried rosemary 1/2 teaspoon dried parsley, 1/2 teaspoon dried thyme
1.5 - 2 pounds organic beef stew meat, cut into 1 inch chunks
2 tablespoons Extra Virgin Olive Oil (divided)
1 medium onion, diced into large chunks
4 cloves garlic, minced
1-2 tablespoons balsamic vinegar or red wine
6 tablespoons tomato paste
1 medium Russet potatoes, leave skin on and chop into 1 inch chunks
2 medium sweet potatoes, leave skin on and chop into 1 inch chunks
2 medium organic carrots, peeled and chopped
2 stalks organic celery, chopped
2 teaspoons Worcestershire sauce
1 bay leaf
4 cups organic, low-sodium beef broth
Water (only enough needed to cover the vegetables)
2 tablespoons chopped fresh parsley (or 1 tablespoon of dried parsley), for garnish
sea salt and pepper to taste
DIRECTIONS
- In a large bowl, combine flour, salt, pepper, and 1/2 tsp Italian seasoning. Add meat and toss with a spoon until well coated.
- In a large pot on medium-high heat, add oil and sear the meat on all sides for about 3 minutes. Remove and set aside.
- Add another tablespoon of oil, then add the onions & garlic to the pan. Cook and saute for about 2 minutes, until onions start to soften. Add wine or balsamic vinegar to deglaze the pan. Stir in the tomato paste and cook for about 2 minutes. Add the beef back to the pan then toss in the potatoes, carrots, celery, 2 tsp Italian seasoning, Worcestershire sauce, bay leaf and stir in the beef broth. If there is not enough liquid to cover the vegetables, add just enough water as needed.
- Bring to a boil then turn heat down to low, cover and simmer for 1 hour to 1.5 hours (depending on your stove), stirring occasionally, until the meat and vegetables is tender to your liking.
- Remove from heat, serve and garnish with parsley.
