This Classic Homemade Beef Stew recipe with sweet potatoes is the ultimate comfort dish on a cold day. It's so good, easy to make, filling, and only 117 calories per serving.  


INGREDIENTS

1/3 cup all-purpose flour (gluten-free if needed)

1 teaspoon sea salt

1/2 teaspoon black pepper

2 - 1/2 teaspoons Italian seasoning (divided) OR you can use1 teaspoon dried rosemary 1/2 teaspoon dried parsley, 1/2 teaspoon dried thyme

1.5 - 2 pounds organic beef stew meat, cut into 1 inch chunks

2 tablespoons Extra Virgin Olive Oil (divided)

1 medium onion, diced into large chunks

4 cloves garlic, minced

1-2 tablespoons balsamic vinegar or red wine

6 tablespoons tomato paste

1 medium Russet potatoes, leave skin on and chop into 1 inch chunks

2 medium sweet potatoes, leave skin on and chop into 1 inch chunks

2 medium organic carrots, peeled and chopped

2 stalks organic celery, chopped

2 teaspoons Worcestershire sauce

1 bay leaf

4 cups organic, low-sodium beef broth

Water (only enough needed to cover the vegetables)

2 tablespoons chopped fresh parsley (or 1 tablespoon of dried parsley), for garnish

sea salt and pepper to taste



DIRECTIONS
  1. In a large bowl, combine flour, salt, pepper, and 1/2 tsp Italian seasoning. Add meat and toss with a spoon until well coated.
  2. In a large pot on medium-high heat, add oil and sear the meat on all sides for about 3 minutes. Remove and set aside.
  3. Add another tablespoon of oil, then add the onions & garlic to the pan. Cook and saute for about 2 minutes, until onions start to soften. Add wine or balsamic vinegar to deglaze the pan. Stir in the tomato paste and cook for about 2 minutes. Add the beef back to the pan then toss in the potatoes, carrots, celery, 2 tsp Italian seasoning, Worcestershire sauce, bay leaf and stir in the beef broth. If there is not enough liquid to cover the vegetables, add just enough water as needed.
  4. Bring to a boil then turn heat down to low, cover and simmer for 1 hour to 1.5 hours (depending on your stove), stirring occasionally, until the meat and vegetables is tender to your liking.
  5. Remove from heat, serve and garnish with parsley.
